Vegan Caesar Salad Recipe (No Anchovy or Eggs!)
A refreshing and flavorful salad that’s perfect for anyone who is looking for a vegan alternative to the classic Caesar salad. This recipe doesn’t have any anchovy or eggs and is easy to make!
Ingredients:
- 1 head of romaine lettuce, washed and dried
- 1/4 cup raw cashews, soaked for at least 3 hours or overnight
- 1/4 cup water
- 2 cloves of garlic
- 2 tablespoons of lemon juice
- 2 teaspoons of Dijon mustard
- 2 tablespoons of nutritional yeast
- 1/4 cup of olive oil
- Salt and pepper
- Croutons (optional)
Instructions:
- Cut the romaine lettuce into bite-sized pieces.
- To make the dressing, drain the soaked cashews and add them to a blender or food processor.
- Add the water, garlic, lemon juice, Dijon mustard, nutritional yeast, olive oil, salt, and pepper.
- Blend until the mixture is smooth and creamy. Taste and adjust seasoning.
- In a large bowl, combine the romaine lettuce and dressing. Mix until the lettuce is coated with the dressing.
- Add croutons, if desired.
- Serve immediately and enjoy!
