- 1 red onion, sliced
- 3 cloves of garlic, minced
- 2 red chillies, sliced
- 1 tablespoon of soy sauce
- 1 tablespoon of oyster sauce
- 1 tablespoon of sweet soy sauce
- 2 tablespoons of vegetable oil
- 1 egg, lightly beaten
- 1 tablespoon of lime juice
- Salt and pepper to taste
- Fresh chopped coriander or scallions for garnish
Instructions:
- First, cook the noodles according to the package instructions, drain and set aside.
- In a wok or large frying pan, heat the vegetable oil over medium-high heat. Add the chicken or shrimp and sauté until cooked through. Remove the chicken and shrimp from the pan and set aside.
- Add the sliced onions, garlic and red chillies to the same wok or frying pan and stir-fry until fragrant, about 2-3 minutes.
- Push the onions, garlic and chillies to the side of the pan and pour the beaten egg into the remaining space. Scramble the egg until fully cooked and then mix it with the onions, garlic and chillies.
- Add the cooked noodles to the pan and stir-fry for a few minutes until they are well-coated with the egg mixture and heated through.
- Add the cooked chicken or shrimp back into the pan and stir-fry with the noodles for 1-2 minutes.
- Now, it’s time to add the sauces. Pour the soy sauce, oyster sauce and sweet soy sauce over the noodles and chicken/shrimp mixture. Stir well to combine and cook for another 1-2 minutes until the noodles are fully coated with the sauce.
- Season with salt, pepper and lime juice to taste. Garnish with chopped coriander or scallions and serve hot.
