- 1 lb potatoes, peeled and chopped into small cubes
- 2 cups bean sprouts
- 1 onion, diced
- 3 cloves garlic, minced
- 1 tbsp curry powder
- 1 can (13.5 oz) coconut milk
- 6 cups chicken stock
- 1 tsp soy sauce
- 1 tbsp vegetable oil
- Salt and pepper to taste
- For garnish: crispy fried noodles, boiled egg, chopped cilantro, lime wedges.
Instructions
- Heat up the vegetable oil in a large pot over medium-high heat. Add the chicken thighs and cook until golden brown, about 4-5 minutes per side. Remove and set aside.
- In the same pot, add the onion and garlic and sauté until fragrant, about 2-3 minutes. Add the curry powder and stir until the spices are fragrant, about 1 minute.
