A Simple and Delicious Pumpkin Soup Recipe for Beginners
Ingredients
- 1 medium-sized pumpkin
- 1 onion
- 2 cloves of garlic
- 1 tablespoon of olive oil
- 1 teaspoon of ground cinnamon
- 1 teaspoon of ground nutmeg
- 4 cups of vegetable broth or water
- Salt and pepper to taste
- Optional garnish: sour cream, parsley, croutons
Instructions
- Cut the pumpkin in half, remove the seeds and skin, and chop into small pieces.
- Chop the onion and garlic.
- In a pot, heat the olive oil on medium-high heat and sauté the onion and garlic for 2-3 minutes until fragrant.
- Add the chopped pumpkin, cinnamon, nutmeg, salt, and pepper to the pot and stir for 1 minute until fragrant.
- Add the vegetable broth or water to the pot and stir to combine.
- Bring the soup to a boil, then reduce the heat to low and let simmer for 25-30 minutes until the pumpkin is tender.
- Use an immersion blender or transfer the soup to a blender and blend until smooth and creamy.
- Adjust the seasoning to taste.
- Serve hot, garnished with sour cream, parsley, and/or croutons if desired.
